Duck Ragu to Die For

What a feast! Nick’s Duck Ragu
(well, Gwyneth’s actually) was a hit. Rated 8 out of 10 by nine-year-old Holly and an 8.5 from me. Sulky 14-year-old son refused to vote but did manage to mumble that it was nice (translation: totally wicked. Can you make it again because I have eaten the lot?) 16-year-old daughter was absent on a mission to rescue a Mum from her children (i.e. babysitting).

Rich and full of smokey flavour from the bacon, the ragu was perfectly reduced to a thick but moist consistency. The duck was tender and melted in your mouth. The base included celery, onion, carrot, garlic and rosemary in canned diced tomatoes and red wine. Fresh pappardelle pasta was the perfect match – a bold sauce requires a substantial pasta.

Served with a strong grated parmesan, it was the perfect meal. In hindsight, we should have had a simple green salad with it – crisp lettuce to contrast the rich, smooth ragu and pasta.

I think Nick is ready to unleash on some guests (sounds terrifying)! We will have to arrange a dinner party to continue to test his skills and increase his confidence.
